Ingredients
- 2 medium rutabagas or turnips, peeled and diced (about 6 cups)
- 1/4 cup fine dry breadcrumbs
- 1/4 cup cream
- 1/2 teaspoon nutmeg
- 1 teaspoon salt
- 2 eggs, beaten
- 3 tablespoons butter
Directions
Cook rutabagas in salted water to cover, about 20 minutes, until soft. Drain and mash. Soak breadcrumbs in cream and stir in nutmeg, salt, and beaten eggs. A little sugar and pepper can be added as well, if desired. Combine with the mashed rutabagas. Put into a buttered 2 1/2 quart casserole, dot with butter, and bake in a 350 degree oven for 1 hour or until top is lightly browned. Serves 6-8.
